Quality control for fruits and vegetables is based on organoleptic and physicochemical characteristics, since these are important to obtain a benefit for both the food and the consumer.

Quality control in two stages, one is sensory evaluation and the other is technical evaluation. Sensory evaluation consists of evaluating, through the sense organs, the characteristics of smell, color, texture, flavor and appearance of the fruit and vegetable.
