Traceability, defined in the Regulation 178/2002 as the possibility of finding and tracking, through all the stages of production, transformation and distribution, of a food, feed or ingredient, is of decisive importance for the protection of consumers. Specifically, it is a risk management tool that helps to facilitate the recall of food in which a problem has been detected and allows consumers to receive specific and accurate information about the products in question.
To achieve traceability, food business operators, including importers, shall have a system in place that enables them to identify their immediate suppliers and their immediate customers, except when these are final consumers (“one step back, one step forward” approach). ).
In accordance with the provisions of article 18.5 of Regulation 178/2002, the Regulation 931/2011 sets specific traceability requirements for food of animal origin, in order to guarantee the correct application of the general requirements established in the Regulation 178/2002.
